Mexican Startup Eatlimmo Converts Mango Leftovers into Nutritional Gold

Using the remnants of mango like mango seeds, peels and uneaten pulp, Eatlimmo produces a nutritional fiber-packed powder.

Eatlimmo, a Mexican food-tech startup founded by Enrique Gonzalez and Flavio Siller, turns mango craps like mango seeds, peels and uneaten pulp into healthy fiber-packed powder. Acting as an emulsifier, the powder claims to replace up to 50% of the eggs, fat in baked food, sugar, pectin and anti-foaming agents in jams and jellies. It serves as a texturizer and natural preservative in sausages and other processed meats.

The main aim of Eatlimmo is to convert the residues into a healthy and affordable food in order to smartly tackle the problem of food waste. Where others see it as garbage, Eatlimmo discovers nutritional gold. The powder does not just limit to mangoes. It also uses seeds and peels of avocados and other tropical fruits available in Mexico.
